For the Chili:
- 1 tablespoon olive oil
- 1 lb boneless, skinless chicken breasts, diced
- 1 small onion, diced
- 1 green bell pepper, chopped
- 2 cloves garlic, minced
- 1 tablespoon Cajun seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 can (4 oz) diced green chilies
- 2 cans (15 oz each) white beans, drained and rinsed
- 2 cups low-sodium chicken broth
- 1/2 cup frozen or canned corn
- 4 oz cream cheese, cubed
- 1/2 cup half-and-half or heavy cream
- juice of 1/2 lime
- chopped cilantro and shredded pepper jack cheese for garnish (optional)
Instructions
- Cook the Chicken: Heat olive oil in a large pot. Cook diced chicken with half the Cajun seasoning until browned. Set aside.
- Prepare the Chili: Sauté onion and bell pepper. Add garlic, Cajun seasoning, salt, pepper, green chilies, white beans, corn, and broth. Simmer.
- Finish the Chili: Return chicken to the pot. Stir in cream cheese, simmer until melted. Add half-and-half and lime juice. Adjust seasoning.
- Serve: Garnish with cilantro and pepper jack cheese. Enjoy hot!
