  • 1 tablespoon olive oil
  • 1 lb boneless, skinless chicken breasts, diced
  • 1 small onion, diced
  • 1 green bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon Cajun seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 can (4 oz) diced green chilies
  • 2 cans (15 oz each) white beans, drained and rinsed
  • 2 cups low-sodium chicken broth
  • 1/2 cup frozen or canned corn
  • 4 oz cream cheese, cubed
  • 1/2 cup half-and-half or heavy cream
  • juice of 1/2 lime
  • chopped cilantro and shredded pepper jack cheese for garnish (optional)

Instructions

  1. Cook the Chicken: Heat olive oil in a large pot. Cook diced chicken with half the Cajun seasoning until browned. Set aside.
  2. Prepare the Chili: Sauté onion and bell pepper. Add garlic, Cajun seasoning, salt, pepper, green chilies, white beans, corn, and broth. Simmer.
  3. Finish the Chili: Return chicken to the pot. Stir in cream cheese, simmer until melted. Add half-and-half and lime juice. Adjust seasoning.
  4. Serve: Garnish with cilantro and pepper jack cheese. Enjoy hot!
