This Creamy Avocado Grilled Cheese takes your classic grilled cheese to the next level! Creamy mashed avocado meets gooey melted cheese between two crispy, golden slices of bread. It’s simple, satisfying, and perfect for lunch, a quick dinner, or even a hearty snack.
Ingredients

2 slices of sourdough or your favorite bread

1/2 ripe avocado

1/2 teaspoon lemon juice

Salt and pepper to taste

1/2 teaspoon garlic powder (optional)

1 tablespoon mayonnaise or softened butter (for the outside of the bread)

2 slices of cheddar cheese (or any melty cheese like mozzarella or provolone)

Optional: a pinch of red pepper flakes or sliced tomato for extra flavor
Instructions

In a small bowl, mash the avocado with lemon juice, salt, pepper, and garlic powder (if using). Set aside.

Spread mayonnaise or butter on one side of each slice of bread.

Place one slice of bread (buttered side down) on a skillet over medium heat.

Layer with one slice of cheese, then spread the mashed avocado, then top with the second slice of cheese.

Add the second slice of bread on top, buttered side up.

Grill for 3–4 minutes on each side, pressing gently, until the bread is golden and the cheese is melted.

Slice and serve hot!
Notes

Swap in whole grain or gluten-free bread if needed.

Add a fried egg or crispy bacon to make it extra hearty.

Best served fresh, but you can reheat it in a skillet for that crispy crunch.
