Description

A classic comfort food, Creamed Chipped Beef on Toast (also known as “SOS”) features savory dried beef in a rich, creamy white sauce, served over crispy toast. It’s quick, hearty, and perfect for breakfast, lunch, or dinner.

Ingredients

  • 2 tablespoons unsalted butter

  • 2 tablespoons all-purpose flour

  • 2 cups whole milk

  • 1 jar (2.5 ounces) dried beef, sliced into strips

  • 1/4 teaspoon black pepper (or to taste)

  • 4-6 slices of toasted bread

Instructions

  1. In a medium saucepan over medium heat, melt the butter.

  2. Whisk in the flour to form a roux. Cook for about 1–2 minutes, stirring constantly.

  3. Slowly pour in the milk while whisking to avoid lumps.

  4. Bring the mixture to a gentle simmer and cook until thickened, about 5 minutes.

  5. Add the sliced dried beef and stir to combine.

  6. Season with black pepper to taste.

  7. Simmer for another 2–3 minutes, stirring occasionally.

  8. Serve hot over slices of toasted bread.

Notes

  • Rinse or soak the dried beef briefly in water if it tastes too salty.

  • For a creamier version, substitute half of the milk with heavy cream.

  • Add a pinch of cayenne pepper or paprika for a little kick.
