Description
A creamy and comforting broccoli soup made with fresh broccoli, onions, garlic, and cream. Perfect for a light lunch or a cozy dinner.

- 2 tablespoons butter
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups fresh broccoli florets
- 3 cups vegetable or chicken broth
- 1 cup heavy cream
- Salt and pepper to taste
- Optional: shredded cheese for garnish
Instructions
- In a large pot, melt the butter over medium heat.
- Add the chopped onion and cook until translucent, about 5 minutes.
- Add the minced garlic and cook for another 1-2 minutes.
- Stir in the broccoli florets and broth. Bring to a boil, then reduce heat and simmer for 15-20 minutes or until the broccoli is tender.
- Use an immersion blender to puree the soup until smooth, or transfer to a blender in batches.
- Return the soup to the pot and stir in the heavy cream. Heat through but do not boil.
- Season with salt and pepper to taste.
- Serve hot, optionally topped with shredded cheese.
Notes
- You can use milk instead of cream for a lighter version.
- For extra flavor, add a pinch of nutmeg.
- Use low-sodium broth if you’re watching your salt intake.
