- 1 cup fresh or frozen cranberries
- 2 tbsp maple syrup or honey
- 1 tsp Dijon mustard
- 1/4 cup apple cider vinegar
- 1/3 cup olive oil
- 1/4 tsp salt
- 1/8 tsp black pepper
- Water, as needed for thinning
Instructions
- Combine cranberries, maple syrup (or honey), Dijon mustard, and apple cider vinegar in a small saucepan over medium heat.
- Cook until cranberries burst and mixture thickens, about 5-7 minutes.
- Let mixture cool slightly, then transfer to a blender.
- Add olive oil, salt, and pepper. Blend until smooth and emulsified.
- If vinaigrette is too thick, blend in a small amount of water to reach desired consistency.
- Taste and adjust seasoning if needed. Transfer to a jar or container and refrigerate.
