Description

A hearty, all-in-one comfort dish combining savory meatloaf with cheesy, bacon-infused potatoes, perfect for satisfying family dinners.


Ingredients

  • 1 lb ground beef
  • 1 lb ground pork
  • 1 cup breadcrumbs
  • 2 eggs, beaten
  • 1/2 cup milk
  • 1 small onion, finely chopped
  • 1 green bell pepper, diced
  • 2 cloves garlic, minced
  • 2 tbsp ketchup
  • 1 tbsp Worcestershire sauce
  • 1 tsp chili powder
  • Salt and pepper to taste
  • 3 cups diced potatoes, parboiled
  • 1/2 cup sour cream
  • 1 cup shredded cheddar cheese
  • 4 slices bacon, cooked and crumbled
  • Optional: chopped parsley for garnish


Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, mix ground beef, pork, breadcrumbs, eggs, milk, onion, bell pepper, garlic, ketchup, Worcestershire sauce, chili powder, salt, and pepper.
  3. Shape into a loaf and place in a greased 9×13-inch baking dish.
  4. In a separate bowl, combine potatoes with sour cream, cheese, and bacon. Season with salt and pepper.
  5. Spread the potato mixture around or over the meatloaf.
  6. Bake uncovered for 45–55 minutes, until meatloaf is cooked through and potatoes are golden.
  7. Let rest 5 minutes, garnish with parsley, and serve.
