A hearty, all-in-one comfort dish combining savory meatloaf with cheesy, bacon-infused potatoes, perfect for satisfying family dinners.
Ingredients
- 1 lb ground beef
- 1 lb ground pork
- 1 cup breadcrumbs
- 2 eggs, beaten
- 1/2 cup milk
- 1 small onion, finely chopped
- 1 green bell pepper, diced
- 2 cloves garlic, minced
- 2 tbsp ketchup
- 1 tbsp Worcestershire sauce
- 1 tsp chili powder
- Salt and pepper to taste
- 3 cups diced potatoes, parboiled
- 1/2 cup sour cream
- 1 cup shredded cheddar cheese
- 4 slices bacon, cooked and crumbled
- Optional: chopped parsley for garnish
Instructions
- Preheat oven to 375°F (190°C).
- In a large bowl, mix ground beef, pork, breadcrumbs, eggs, milk, onion, bell pepper, garlic, ketchup, Worcestershire sauce, chili powder, salt, and pepper.
- Shape into a loaf and place in a greased 9×13-inch baking dish.
- In a separate bowl, combine potatoes with sour cream, cheese, and bacon. Season with salt and pepper.
- Spread the potato mixture around or over the meatloaf.
- Bake uncovered for 45–55 minutes, until meatloaf is cooked through and potatoes are golden.
- Let rest 5 minutes, garnish with parsley, and serve.
