Cowboy Caviar is a vibrant and zesty dip made with black beans, corn, bell peppers, and a tangy dressing. It’s perfect as a party appetizer or a fresh side dish.

- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) black-eyed peas, drained and rinsed
- 1 1/2 cups frozen corn, thawed
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1/2 red onion, finely diced
- 1 jalapeño, seeded and minced
- 1/4 cup fresh cilantro, chopped
- 1/3 cup olive oil
- 1/4 cup red wine vinegar
- 1 tablespoon lime juice
- 1 teaspoon garlic powder
- 1/2 teaspoon chili powder
- 1/2 teaspoon cumin
- Salt and pepper to taste
Instructions
- In a large bowl, combine black beans, black-eyed peas, corn, red and green bell peppers, red onion, jalapeño, and cilantro.
- In a small bowl, whisk together olive oil, red wine vinegar, lime juice, garlic powder, chili powder, cumin, salt, and pepper.
- Pour the dressing over the bean and vegetable mixture and toss until well combined.
- Cover and refrigerate for at least 1 hour to allow the flavors to meld.
- Serve chilled with tortilla chips or as a side dish.
Notes
- For extra spice, leave some jalapeño seeds in.
- Can be made a day ahead for better flavor.
- Use fresh corn if in season for added sweetness.
