Description

Cowboy Caviar is a vibrant and zesty dip made with black beans, corn, bell peppers, and a tangy dressing. It’s perfect as a party appetizer or a fresh side dish.


Ingredients

  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) black-eyed peas, drained and rinsed
  • 1 1/2 cups frozen corn, thawed
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1/2 red onion, finely diced
  • 1 jalapeño, seeded and minced
  • 1/4 cup fresh cilantro, chopped
  • 1/3 cup olive oil
  • 1/4 cup red wine vinegar
  • 1 tablespoon lime juice
  • 1 teaspoon garlic powder
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine black beans, black-eyed peas, corn, red and green bell peppers, red onion, jalapeño, and cilantro.
  2. In a small bowl, whisk together olive oil, red wine vinegar, lime juice, garlic powder, chili powder, cumin, salt, and pepper.
  3. Pour the dressing over the bean and vegetable mixture and toss until well combined.
  4. Cover and refrigerate for at least 1 hour to allow the flavors to meld.
  5. Serve chilled with tortilla chips or as a side dish.

Notes

  • For extra spice, leave some jalapeño seeds in.
  • Can be made a day ahead for better flavor.
  • Use fresh corn if in season for added sweetness.
