Description

Cottage Cheese Pasta is a creamy, high-protein dish made with smooth blended cottage cheese, garlic, and herbs. It’s a healthy twist on traditional creamy pasta, perfect for a quick and satisfying meal.


Ingredients

  • 8 ounces pasta (penne, fusilli, or your choice)
  • 1 cup cottage cheese
  • 1 clove garlic, minced
  • 1 tablespoon olive oil
  • 1/4 cup grated Parmesan cheese
  • 1/4 teaspoon black pepper
  • Salt to taste
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • 2 tablespoons chopped fresh basil or parsley
  • 1/4 cup reserved pasta water

Instructions

  1. Cook pasta according to package directions until al dente. Reserve 1/4 cup of the pasta water before draining.
  2. While pasta cooks, blend cottage cheese, garlic, olive oil, Parmesan, black pepper, and salt in a food processor or blender until smooth and creamy.
  3. Return cooked pasta to the pot. Pour the blended cottage cheese sauce over the pasta and stir to combine.
  4. Gradually add reserved pasta water as needed to loosen the sauce and create a silky texture.
  5. Stir in red pepper flakes if using, and top with fresh herbs.
  6. Serve warm with extra Parmesan if desired.

Notes

  • Use low-fat cottage cheese for a lighter version.
  • Add sautéed spinach, mushrooms, or peas for extra nutrition.
  • Can be served warm or cold as a pasta salad.
