- 2 teaspoons active dry yeast
- 1/4 cup honey
- 1 tablespoon molasses
- 1 tablespoon brown sugar
- 1 1/2 cups whole wheat flour
- 1 cup bread flour (plus more as needed)
- 2 tablespoons unsweetened cocoa powder
- 1 teaspoon salt
- 2 tablespoons vegetable oil
- 2 tablespoons cornmeal (for dusting)
- Oats (optional, for topping)
Instructions
- In a large bowl, combine warm water and yeast. Let sit for 5 minutes until foamy.
- Stir in honey, molasses, and brown sugar until dissolved.
- Add whole wheat flour, cocoa powder, and salt. Mix until combined.
- Add bread flour and vegetable oil, and knead the dough for 8–10 minutes until smooth and elastic (add more flour if too sticky).
- Cover bowl with a towel and let dough rise in a warm place for 1–1.5 hours, or until doubled in size.
- Punch down the dough and divide into 6–8 small loaf shapes or rolls.
- Place on a baking sheet dusted with cornmeal. Sprinkle tops with oats if using. Cover and let rise another 30–45 minutes.
- Preheat oven to 350°F (175°C). Bake for 20–25 minutes or until cooked through and lightly browned.
- Cool slightly before serving warm with butter.
Notes
- Use dark cocoa powder for a richer color and flavor.
- Dough can also be shaped into a large loaf and baked for 30–35 minutes.
- Freezes well—wrap tightly and thaw before reheating.
