Description
This slow cooker beef stew is hearty, flavorful, and super easy to make. Loaded with tender chunks of beef, soft carrots, potatoes, and a rich broth, it’s the ultimate comfort food. Just toss everything into your slow cooker and let it do all the work!
Ingredients

2 lbs beef stew meat, cut into 1-inch cubes

4 medium carrots, peeled and sliced

3 medium potatoes, peeled and diced

1 onion, chopped

3 cloves garlic, minced

3 cups beef broth

2 tbsp tomato paste

1 tbsp Worcestershire sauce

1 tsp salt

1/2 tsp black pepper

1 tsp dried thyme

1 tsp dried rosemary

2 tbsp cornstarch

2 tbsp cold water

1 tbsp olive oil (for searing, optional)
Instructions

(Optional) In a skillet over medium-high heat, heat olive oil and sear the beef chunks until browned on all sides. Transfer to the slow cooker.

Add carrots, potatoes, onion, and garlic to the slow cooker.

In a bowl, mix together beef broth, tomato paste, Worcestershire sauce, salt, pepper, thyme, and rosemary. Pour over the beef and vegetables.

Cover and cook on low for 8-9 hours or on high for 4-5 hours, until beef is tender and vegetables are soft.

In the last 30 minutes of cooking, mix cornstarch and cold water in a small bowl to make a slurry. Stir it into the stew to thicken.

Taste and adjust seasoning if needed. Serve hot with crusty bread.

Browning the beef adds extra flavor, but you can skip this step to save time.
