Description

These quick and easy cookies are made with boxed brownie mix! They’re rich, chewy, and have that perfect fudgy center with crisp edges. Perfect for a last-minute dessert or a fun twist on classic brownies.


Ingredients

  • 1 box (18-20 oz) brownie mix

  • 2 large eggs

  • 1/3 cup vegetable oil

  • 1/4 cup all-purpose flour

  • 1 tsp vanilla extract (optional)

  • 1/2 cup chocolate chips or chunks (optional)


Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

  2. In a large mixing bowl, combine the brownie mix, eggs, oil, and flour. Stir until a thick dough forms.

  3. If using, fold in chocolate chips or chunks.

  4. Scoop out tablespoon-sized portions of dough and place them about 2 inches apart on the prepared baking sheet.

  5. Bake for 9–11 minutes, or until the edges are set but the centers still look soft.

  6. Let the cookies cool on the pan for 5 minutes, then transfer to a wire rack to cool completely.


Notes

  • Add a pinch of sea salt on top before baking for a sweet and salty finish.

  • You can mix in chopped nuts, M&Ms, or caramel bits for extra flavor.

  • Don’t overbake — they’ll continue to set as they cool!
