Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream together butter, brown sugar, and granulated sugar until light and fluffy.
- Mix in eggs and vanilla extract until combined.
- In a separate bowl, whisk together flour, baking soda, baking powder, cornstarch, salt, and cinnamon.
- Gradually add dry ingredients to the wet ingredients and mix to form a soft dough.
- In another bowl, combine flour, brown sugar, cinnamon, and softened butter to make the crumb topping.
- Scoop cookie dough onto the baking sheet, flatten slightly, and top each with crumb topping.
- Bake for 10–12 minutes until edges are set and centers are just cooked through.
- Cool completely and optionally drizzle with a glaze made from powdered sugar and milk.

- Add chopped pecans or walnuts to the crumb topping for crunch.
- Incorporate a pinch of nutmeg for extra spice.
