Description

This Classic Dill Pickle Macaroni Salad is the perfect side dish for any BBQ, potluck, or summer gathering. It’s creamy, tangy, and loaded with crunchy dill pickles, tender pasta, and fresh herbs. If you’re a pickle lover, this one’s for you!


Ingredients

  • 2 cups elbow macaroni, uncooked

  • 1 cup chopped dill pickles

  • 1/2 cup finely diced red onion

  • 1/2 cup chopped celery

  • 2 tablespoons fresh dill, chopped

  • 3/4 cup mayonnaise

  • 1/4 cup sour cream

  • 2 tablespoons pickle juice

  • 1 teaspoon Dijon mustard

  • 1/2 teaspoon garlic powder

  • Salt and pepper, to taste


Instructions

  1. Cook the macaroni according to package directions. Drain and rinse under cold water. Set aside to cool.

  2. In a large bowl, mix together mayonnaise, sour cream, pickle juice, Dijon mustard, garlic powder, salt, and pepper.

  3. Add the cooked macaroni, chopped pickles, red onion, celery, and fresh dill to the bowl.

  4. Toss everything together until well combined and evenly coated.

  5. Cover and refrigerate for at least 1 hour to let the flavors blend.

  6. Give it a stir before serving and adjust seasoning if needed.


Notes

  • You can add chopped hard-boiled eggs or shredded cheddar cheese for a twist.

  • For a lighter version, use Greek yogurt in place of sour cream.

 

  • Tastes best after sitting in the fridge for a few hours or overnight
