These Cinnamon Sugar French Toast Muffins are everything you love about classic French toast, but in an easy, grab-and-go muffin form. They’re soft on the inside, golden on top, and coated in a delicious cinnamon sugar mixture. Great for busy mornings or a cozy weekend brunch!
Ingredients
For the Muffins:

6 cups cubed bread (day-old brioche or challah works best)

4 large eggs

1 cup milk

1/4 cup heavy cream

1/4 cup granulated sugar

1 tsp vanilla extract

1/2 tsp ground cinnamon

Pinch of salt
For the Cinnamon Sugar Topping:

1/4 cup unsalted butter, melted

1/4 cup granulated sugar

1 tsp ground cinnamon
Instructions

Preheat oven to 350°F (175°C). Grease a 12-cup muffin tin or line with paper liners.

In a large bowl, whisk together eggs, milk, cream, sugar, vanilla, cinnamon, and salt.

Add the bread cubes to the bowl and gently stir until all the bread is soaked in the mixture. Let sit for 5–10 minutes.

Spoon the soaked bread mixture evenly into the muffin cups, pressing down slightly.

Bake for 25–30 minutes or until the tops are golden brown and the muffins are set.

While the muffins are still warm, brush the tops with melted butter.

In a small bowl, mix together the sugar and cinnamon. Sprinkle generously over each muffin.

Let cool slightly before serving. Best enjoyed warm!
