Description

These Cinnamon Sugar French Toast Muffins are everything you love about classic French toast, but in an easy, grab-and-go muffin form. They’re soft on the inside, golden on top, and coated in a delicious cinnamon sugar mixture. Great for busy mornings or a cozy weekend brunch!


Ingredients

For the Muffins:

  • 6 cups cubed bread (day-old brioche or challah works best)

  • 4 large eggs

  • 1 cup milk

  • 1/4 cup heavy cream

  • 1/4 cup granulated sugar

  • 1 tsp vanilla extract

  • 1/2 tsp ground cinnamon

  • Pinch of salt

For the Cinnamon Sugar Topping:

  • 1/4 cup unsalted butter, melted

  • 1/4 cup granulated sugar

  • 1 tsp ground cinnamon


Instructions

  • Preheat oven to 350°F (175°C). Grease a 12-cup muffin tin or line with paper liners.

  • In a large bowl, whisk together eggs, milk, cream, sugar, vanilla, cinnamon, and salt.

  • Add the bread cubes to the bowl and gently stir until all the bread is soaked in the mixture. Let sit for 5–10 minutes.

  • Spoon the soaked bread mixture evenly into the muffin cups, pressing down slightly.

  • Bake for 25–30 minutes or until the tops are golden brown and the muffins are set.

  • While the muffins are still warm, brush the tops with melted butter.

  • In a small bowl, mix together the sugar and cinnamon. Sprinkle generously over each muffin.

 

  • Let cool slightly before serving. Best enjoyed warm!


Notes

  • You can use any bread, but rich, thick bread like brioche or challah gives the best texture.

  • These muffins freeze well—just reheat in the microwave or oven.

  • Try adding mini chocolate chips or chopped pecans for a twist.
