Description

This cinnamon sugar brie and apple grilled cheese is the perfect mix of sweet and savory. Creamy brie melts beautifully with thin apple slices, all wrapped in buttery cinnamon-sugar bread. It’s crispy, gooey, and a little bit gourmet—great for brunch, lunch, or a sweet snack.

Ingredients

  • 4 slices of bread (brioche or sourdough works great)

  • 4 oz brie cheese, sliced (rind optional)

  • 1 small apple, thinly sliced (Honeycrisp or Granny Smith)

  • 2 tbsp butter, softened

  • 1 tbsp granulated sugar

  • 1/2 tsp ground cinnamon

  • Optional: a drizzle of honey or fig jam

Instructions

  • In a small bowl, mix the sugar and cinnamon together.

  • Butter one side of each slice of bread and sprinkle with the cinnamon sugar mix. Press lightly so it sticks.

  • On the unbuttered side, layer brie slices and apple slices. Add a drizzle of honey or fig jam if desired.

  • Top with the second slice of bread, cinnamon-sugar side facing out.

  • Heat a skillet over medium heat.

  • Grill sandwiches for 3–4 minutes per side, until golden brown and the brie is melted.

  • Let sit for 1–2 minutes before slicing—brie gets super melty!

Notes

  • Try pear slices instead of apple for a different twist.

  • Add chopped pecans for crunch.

  • If the brie is too soft to slice, chill it briefly first.
