This cinnamon sugar brie and apple grilled cheese is the perfect mix of sweet and savory. Creamy brie melts beautifully with thin apple slices, all wrapped in buttery cinnamon-sugar bread. It’s crispy, gooey, and a little bit gourmet—great for brunch, lunch, or a sweet snack.
Ingredients

4 slices of bread (brioche or sourdough works great)

4 oz brie cheese, sliced (rind optional)

1 small apple, thinly sliced (Honeycrisp or Granny Smith)

2 tbsp butter, softened

1 tbsp granulated sugar

1/2 tsp ground cinnamon

Optional: a drizzle of honey or fig jam
Instructions

In a small bowl, mix the sugar and cinnamon together.

Butter one side of each slice of bread and sprinkle with the cinnamon sugar mix. Press lightly so it sticks.

On the unbuttered side, layer brie slices and apple slices. Add a drizzle of honey or fig jam if desired.

Top with the second slice of bread, cinnamon-sugar side facing out.

Heat a skillet over medium heat.

Grill sandwiches for 3–4 minutes per side, until golden brown and the brie is melted.

Let sit for 1–2 minutes before slicing—brie gets super melty!
