Description

Cookies:

Filling:

  • 1/3 cup brown sugar
  • 1 tablespoon ground cinnamon
  • 2 tablespoons unsalted butter (melted)

Glaze:

  • 1 cup powdered sugar
  • 23 tablespoons milk
  • 1/2 teaspoon vanilla extract

Instructions

  1. Cookies: In a medium bowl, whisk together flour, baking powder, and salt. In a large mixing bowl, cream butter and granulated sugar. Add egg and vanilla, beat until combined. Gradually add dry ingredients, mix until dough forms.
  2. Rolling: Divide dough in half, shape into rectangle. Roll out each portion between parchment paper. Brush melted butter, sprinkle with brown sugar and cinnamon. Roll into log, chill for 2 hours.
  3. Baking: Preheat oven to 350°F (175°C). Slice chilled dough, place on baking sheets. Bake for 10–12 minutes until lightly golden. Cool completely.
  4. Glaze: Whisk powdered sugar, milk, and vanilla. Drizzle over cooled cookies before serving.

Notes

  • To make ahead, freeze rolled dough logs for up to 2 months and slice as needed.
  • You can also add chopped pecans or use a cream cheese glaze for a twist.
