Additional Ingredients:

  • 1 1/2 cups peeled and finely chopped apples
  • 3/4 cup chopped walnuts
  • Optional coarse sugar for topping

Instructions

  1. Preheat Oven: Preheat oven to 375°F. Line a 12-cup muffin tin with paper liners or grease lightly.
  2. Mix Dry Ingredients: In a medium bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
  3. Prepare Wet Mixture: In a large mixing bowl, whisk together melted butter, granulated sugar, and brown sugar. Beat in eggs one at a time, then add vanilla. Stir in milk until smooth.
  4. Combine Wet and Dry: Add dry ingredients to the wet mixture and stir just until combined. Do not overmix.
  5. Add Apples and Walnuts: Gently fold in the apples and walnuts.
  6. Bake: Divide batter among muffin cups, filling each about 3/4 full. Sprinkle with coarse sugar if desired. Bake for 18–22 minutes until a toothpick inserted into the center comes out clean.
  7. Cool: Cool muffins in the pan for 5 minutes, then transfer to a wire rack to cool completely.
