- 2 tablespoons fresh cilantro, chopped

Instructions
- Rinse the rice under cold water until the water runs clear to remove excess starch.
- In a medium saucepan, heat olive oil over medium heat. Add the rice and cook, stirring frequently, until lightly toasted.
- Add garlic and stir for about 30 seconds until fragrant.
- Pour in water or chicken broth and add salt. Bring to a boil.
- Reduce heat to low, cover, and simmer for 18-20 minutes, or until the rice is tender and the liquid is absorbed.
- Remove from heat and let it sit, covered, for 5 minutes.
- Fluff the rice with a fork, then stir in lime juice, lime zest, and chopped cilantro.
