Description

Ingredients

  • 1 tablespoon olive oil
  • 2 tablespoons fresh cilantro, chopped

  • 1 teaspoon fresh lime zest
  • 2 cloves garlic, minced
  • 2 cups water or chicken broth
  • 1/2 teaspoon salt

Instructions

  1. Rinse the rice under cold water until the water runs clear to remove excess starch.
  2. In a medium saucepan, heat olive oil over medium heat. Add the rice and cook, stirring frequently, until lightly toasted.
  3. Add garlic and stir for about 30 seconds until fragrant.
  4. Pour in water or chicken broth and add salt. Bring to a boil.
  5. Reduce heat to low, cover, and simmer for 18-20 minutes, or until the rice is tender and the liquid is absorbed.
  6. Remove from heat and let it sit, covered, for 5 minutes.
  7. Fluff the rice with a fork, then stir in lime juice, lime zest, and chopped cilantro.
