Description

Cilantro Lime Chicken is a flavorful, zesty dish made with marinated chicken breasts in a citrusy lime and fresh cilantro blend, perfect for grilling or pan-searing.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/4 cup freshly squeezed lime juice (about 2 limes)
  • 2 tablespoons lime zest
  • 1/4 cup chopped fresh cilantro
  • 3 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  1. In a large bowl, whisk together lime juice, lime zest, cilantro, olive oil, garlic, cumin, chili powder, salt, and pepper.
  2. Add chicken breasts to the marinade and ensure they are well coated. Cover and refrigerate for at least 30 minutes, preferably 2-4 hours.
  3. Preheat a grill or skillet over medium-high heat.
  4. Remove chicken from marinade and grill or sear for 5-7 minutes per side, or until the internal temperature reaches 165°F (74°C).
  5. Let chicken rest for 5 minutes before slicing and serving.

Notes

  • For extra flavor, marinate overnight.
  • Great served with rice, tortillas, or in salads.
  • Can substitute chicken thighs for a juicier result.
