Description
Cilantro Lime Chicken is a zesty, juicy grilled or pan-seared chicken dish marinated in fresh lime juice, garlic, and cilantro. It’s perfect for tacos, salads, or served over rice.
Ingredients
- 1.5 lbs boneless, skinless chicken thighs or breasts
- 1/4 cup fresh lime juice (about 2 limes)
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1/2 cup chopped fresh cilantro
- 1 tsp ground cumin
- 1/2 tsp chili powder
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- In a bowl or zip-top bag, combine lime juice, olive oil, garlic, cilantro, cumin, chili powder, salt, and pepper.
- Add chicken and marinate in the refrigerator for at least 30 minutes, up to 4 hours.
- Preheat grill or skillet over medium-high heat.
- Remove chicken from marinade and cook for 5–6 minutes per side, or until internal temperature reaches 165°F (74°C).
- Let rest for a few minutes before slicing.
- Serve with lime wedges and extra chopped cilantro if desired.
Notes
- Use chicken thighs for extra juiciness and flavor.
- Great as a filling for tacos, burritos, or grain bowls.
- Double the marinade to use as a sauce (boil before serving).
