Description

Cilantro Lime Chicken is a zesty, juicy grilled or pan-seared chicken dish marinated in fresh lime juice, garlic, and cilantro. It’s perfect for tacos, salads, or served over rice.


Ingredients

  • 1.5 lbs boneless, skinless chicken thighs or breasts
  • 1/4 cup fresh lime juice (about 2 limes)
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1/2 cup chopped fresh cilantro
  • 1 tsp ground cumin
  • 1/2 tsp chili powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper


Instructions

  1. In a bowl or zip-top bag, combine lime juice, olive oil, garlic, cilantro, cumin, chili powder, salt, and pepper.
  2. Add chicken and marinate in the refrigerator for at least 30 minutes, up to 4 hours.
  3. Preheat grill or skillet over medium-high heat.
  4. Remove chicken from marinade and cook for 5–6 minutes per side, or until internal temperature reaches 165°F (74°C).
  5. Let rest for a few minutes before slicing.
  6. Serve with lime wedges and extra chopped cilantro if desired.

Notes

  • Use chicken thighs for extra juiciness and flavor.
  • Great as a filling for tacos, burritos, or grain bowls.
  • Double the marinade to use as a sauce (boil before serving).
