- 1 can (14.5 oz) diced tomatoes
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano

Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, and celery; cook until softened, about 5 minutes.
- Stir in garlic and cook for another minute.
- Add cooked turkey, chicken broth, and diced tomatoes with their juice.
- Season with thyme, oregano, salt, and pepper.
- Bring the soup to a boil, then reduce heat and simmer for 20 minutes.
- Stir in the chopped spinach and cook until wilted, about 2-3 minutes.
- Adjust seasoning if needed and serve hot.
