Instructions
- Place the chopped chocolate in a heatproof bowl.

- Pour the hot cream over the chopped chocolate and let sit for 2-3 minutes to melt.
- Add vanilla extract if using, then stir gently until the mixture is smooth and glossy.
- Cover and refrigerate the ganache for at least 1-2 hours, or until firm enough to scoop.
- Using a small cookie scoop or spoon, portion the ganache and roll into balls with your hands.
- Roll each truffle in cocoa powder, chopped nuts, coconut, or sprinkles to coat.
- Refrigerate until ready to serve. Serve chilled or at room temperature.
