- 1 cup creamy peanut butter
- 1/4 cup maple syrup
- 1 tsp vanilla extract
- 1/2 cup almond flour
- 1/4 cup coconut flour
- 1/4 tsp salt
- 1/3 cup mini chocolate chips
- 1/2 cup melted dark chocolate (for coating, optional)
Instructions
- In a mixing bowl, combine peanut butter, maple syrup, and vanilla extract. Stir until smooth.
- Add almond flour, coconut flour, and salt. Mix until a dough forms.
- Fold in mini chocolate chips.
- Using your hands or a cookie scoop, form the dough into bite-sized balls and place them on a lined tray.
- If desired, dip each bite into melted dark chocolate and place back on the tray.
- Chill in the refrigerator for 20–30 minutes, or until firm.
- Store in an airtight container in the fridge for up to one week.
Notes
- You can use honey or agave instead of maple syrup if preferred.
- Use any nut or seed butter if avoiding peanuts.
- Add a sprinkle of sea salt on top for extra flavor.
