Description

Homemade Chocolate Fudge Pop-Tarts are a delicious and nostalgic treat with a flaky pastry crust filled with rich chocolate fudge and topped with a sweet chocolate glaze.


Ingredients

  • 2 1/2 cups all-purpose flour
  • 1 tsp salt
  • 1 tbsp sugar
  • 1 cup unsalted butter, cold and cubed
  • 1/2 cup ice water
  • 1 cup semi-sweet chocolate chips
  • 1/4 cup heavy cream
  • 1/4 cup powdered sugar
  • 1 tbsp cocoa powder
  • 1 tsp vanilla extract
  • 1 egg (for egg wash)
  • Sprinkles (optional, for topping)

Instructions

  1. In a large bowl, mix flour, salt, and sugar. Cut in the cold butter until the mixture resembles coarse crumbs.
  2. Add ice water a tablespoon at a time and mix until the dough comes together. Divide dough in half, wrap in plastic, and chill for 30 minutes.
  3. Meanwhile, melt chocolate chips and heavy cream together until smooth. Stir in powdered sugar, cocoa powder, and vanilla extract. Let cool to thicken.
  4. Preheat oven to 375°F (190°C). Roll out dough on a floured surface and cut into rectangles (about 3×4 inches).
  5. Place half of the rectangles on a parchment-lined baking sheet. Add a spoonful of fudge filling to the center of each.
  6. Top with another rectangle of dough, press edges to seal with a fork, and brush tops with beaten egg.
  7. Bake for 20-25 minutes until golden brown. Let cool on a wire rack.
  8. Drizzle or spread additional fudge or chocolate glaze on top and decorate with sprinkles if desired.

Notes

  • Dough can be made ahead and kept refrigerated for up to 2 days.
  • Use a piping bag for cleaner filling application.
  • For a vegan version, substitute dairy and egg with plant-based alternatives.
