Homemade Chocolate Fudge Pop-Tarts are a delicious and nostalgic treat with a flaky pastry crust filled with rich chocolate fudge and topped with a sweet chocolate glaze.

- 2 1/2 cups all-purpose flour
- 1 tsp salt
- 1 tbsp sugar
- 1 cup unsalted butter, cold and cubed
- 1/2 cup ice water
- 1 cup semi-sweet chocolate chips
- 1/4 cup heavy cream
- 1/4 cup powdered sugar
- 1 tbsp cocoa powder
- 1 tsp vanilla extract
- 1 egg (for egg wash)
- Sprinkles (optional, for topping)
Instructions
- In a large bowl, mix flour, salt, and sugar. Cut in the cold butter until the mixture resembles coarse crumbs.
- Add ice water a tablespoon at a time and mix until the dough comes together. Divide dough in half, wrap in plastic, and chill for 30 minutes.
- Meanwhile, melt chocolate chips and heavy cream together until smooth. Stir in powdered sugar, cocoa powder, and vanilla extract. Let cool to thicken.
- Preheat oven to 375°F (190°C). Roll out dough on a floured surface and cut into rectangles (about 3×4 inches).
- Place half of the rectangles on a parchment-lined baking sheet. Add a spoonful of fudge filling to the center of each.
- Top with another rectangle of dough, press edges to seal with a fork, and brush tops with beaten egg.
- Bake for 20-25 minutes until golden brown. Let cool on a wire rack.
- Drizzle or spread additional fudge or chocolate glaze on top and decorate with sprinkles if desired.
Notes
- Dough can be made ahead and kept refrigerated for up to 2 days.
- Use a piping bag for cleaner filling application.
- For a vegan version, substitute dairy and egg with plant-based alternatives.
