Description

Crispy wafer cookies coated in smooth, rich chocolate, perfect for a quick dessert or snack.

Ingredients

Units Scale
  • 24 wafer cookies
  • 2 cups semisweet chocolate chips
  • 1 tablespoon coconut oil (optional, for smoother melting)
  • Sprinkles, crushed nuts, or shredded coconut (optional, for topping)

Instructions

  1. Line a baking sheet with parchment paper.
  2. In a microwave-safe bowl, combine chocolate chips and coconut oil. Microwave in 30-second intervals, stirring between each, until fully melted and smooth.
  3. Dip each wafer cookie into the melted chocolate, using a fork to coat evenly and allowing excess chocolate to drip off.
  4. Place coated cookies on the prepared baking sheet.
  5. If desired, add toppings like sprinkles or crushed nuts before the chocolate sets.
  6. Refrigerate the cookies for 15–20 minutes, or until the chocolate is firm.
  7. Serve chilled or at room temperature. Store in an airtight container.

Notes

  • Use white or dark chocolate as an alternative coating.
  • Add a drop of vanilla or mint extract to the chocolate for extra flavor.
  • Cookies can be stored in the fridge for up to 1 week.
