Instructions
- Line a baking sheet with parchment paper.
- In a microwave-safe bowl, combine chocolate chips and coconut oil. Microwave in 30-second intervals, stirring between each, until fully melted and smooth.
- Dip each wafer cookie into the melted chocolate, using a fork to coat evenly and allowing excess chocolate to drip off.
- Place coated cookies on the prepared baking sheet.
- If desired, add toppings like sprinkles or crushed nuts before the chocolate sets.
- Refrigerate the cookies for 15–20 minutes, or until the chocolate is firm.
- Serve chilled or at room temperature. Store in an airtight container.
