Description

These White Chocolate Blueberry Crumble Bars are a deliciously sweet and tangy treat made with fresh blueberries, a buttery oat crumble, and creamy white chocolate. Perfect for dessert or a snack!


Ingredients

  • 1 cup all-purpose flour
  • 1 cup old-fashioned rolled oats
  • 1/2 cup brown sugar, packed
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/2 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1 cup fresh or frozen blueberries
  • 1 tablespoon cornstarch
  • 2 tablespoons granulated sugar
  • 1 tablespoon lemon juice
  • 1/2 cup white chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C). Line an 8×8 inch baking dish with parchment paper.
  2. In a medium bowl, mix together flour, oats, brown sugar, salt, and baking powder.
  3. Add the melted butter and vanilla extract. Stir until the mixture is crumbly.
  4. Press about two-thirds of the mixture into the bottom of the prepared baking dish to form the crust.
  5. In a separate bowl, toss the blueberries with cornstarch, granulated sugar, and lemon juice.
  6. Spread the blueberry mixture evenly over the crust.
  7. Sprinkle the white chocolate chips over the blueberries.
  8. Top with the remaining oat mixture, gently pressing it down.
  9. Bake for 30–35 minutes, or until the top is golden brown and the blueberry filling is bubbling.
  10. Let the bars cool completely in the pan before lifting out and cutting into squares.

Notes

  • Use frozen blueberries if fresh are not available, but do not thaw them before use.
  • For extra flavor, add a pinch of cinnamon to the crumble mixture.
  • Store leftovers in an airtight container at room temperature for up to 3 days.
