- 1 cup all-purpose flour
- 1 cup old-fashioned rolled oats
- 1/2 cup brown sugar, packed
- 1/4 teaspoon salt
- 1/2 teaspoon baking powder
- 1/2 cup unsalted butter, melted
- 1 teaspoon vanilla extract
- 1 cup fresh or frozen blueberries
- 1 tablespoon cornstarch
- 2 tablespoons granulated sugar
- 1 tablespoon lemon juice
- 1/2 cup white chocolate chips
Instructions
- Preheat the oven to 350°F (175°C). Line an 8×8 inch baking dish with parchment paper.
- In a medium bowl, mix together flour, oats, brown sugar, salt, and baking powder.
- Add the melted butter and vanilla extract. Stir until the mixture is crumbly.
- Press about two-thirds of the mixture into the bottom of the prepared baking dish to form the crust.
- In a separate bowl, toss the blueberries with cornstarch, granulated sugar, and lemon juice.
- Spread the blueberry mixture evenly over the crust.
- Sprinkle the white chocolate chips over the blueberries.
- Top with the remaining oat mixture, gently pressing it down.
- Bake for 30–35 minutes, or until the top is golden brown and the blueberry filling is bubbling.
- Let the bars cool completely in the pan before lifting out and cutting into squares.
Notes
- Use frozen blueberries if fresh are not available, but do not thaw them before use.
- For extra flavor, add a pinch of cinnamon to the crumble mixture.
- Store leftovers in an airtight container at room temperature for up to 3 days.
