- 1 lb boneless, skinless chicken breasts
- 1/2 cup chipotle ranch dressing
- 4 large flour tortillas
- 1 cup cooked white or brown rice
- 1 cup canned black beans, drained and rinsed
- 1 cup shredded cheddar or Mexican blend cheese
- 1/2 cup diced tomatoes
- 1/2 cup shredded lettuce
- 1/4 cup chopped cilantro (optional)
- 1/4 cup sour cream (optional)
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- In a bowl, combine chicken breasts with chipotle ranch dressing. Marinate for at least 30 minutes in the refrigerator.
- Preheat grill or grill pan over medium-high heat. Lightly oil the grill.
- Grill the marinated chicken for about 6-7 minutes per side or until fully cooked. Let it rest for 5 minutes, then slice into strips.
- Warm the flour tortillas in a skillet or microwave until pliable.
- Assemble the burritos: layer each tortilla with rice, black beans, grilled chicken, cheese, tomatoes, lettuce, and cilantro.
- Add sour cream or extra chipotle ranch if desired.
- Fold in the sides of the tortilla and roll up tightly into a burrito.
- Optional: Grill the burrito seam-side down for 1-2 minutes to seal and add crispiness.
- Serve warm and enjoy.

- Add jalapeños or hot sauce for extra heat.
