Description

A flavorful and hearty burrito packed with chipotle ranch-marinated grilled chicken, rice, beans, cheese, and fresh toppings wrapped in a warm tortilla.


Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 1/2 cup chipotle ranch dressing
  • 4 large flour tortillas
  • 1 cup cooked white or brown rice
  • 1 cup canned black beans, drained and rinsed
  • 1 cup shredded cheddar or Mexican blend cheese
  • 1/2 cup diced tomatoes
  • 1/2 cup shredded lettuce
  • 1/4 cup chopped cilantro (optional)
  • 1/4 cup sour cream (optional)
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. In a bowl, combine chicken breasts with chipotle ranch dressing. Marinate for at least 30 minutes in the refrigerator.
  2. Preheat grill or grill pan over medium-high heat. Lightly oil the grill.
  3. Grill the marinated chicken for about 6-7 minutes per side or until fully cooked. Let it rest for 5 minutes, then slice into strips.
  4. Warm the flour tortillas in a skillet or microwave until pliable.
  5. Assemble the burritos: layer each tortilla with rice, black beans, grilled chicken, cheese, tomatoes, lettuce, and cilantro.
  6. Add sour cream or extra chipotle ranch if desired.
  7. Fold in the sides of the tortilla and roll up tightly into a burrito.
  8. Optional: Grill the burrito seam-side down for 1-2 minutes to seal and add crispiness.
  9. Serve warm and enjoy.

Notes

  • Use rotisserie chicken for a quicker option.
  • Add jalapeños or hot sauce for extra heat.
  • Swap in whole wheat tortillas for a healthier twist.
