Chipotle Beef Barbacoa is a tender, flavorful shredded beef dish slow-cooked with chipotle peppers, garlic, and spices. Perfect for tacos, burritos, or rice bowls.

- 3 lbs beef chuck roast, cut into large chunks
- 3 chipotle peppers in adobo sauce
- 1 onion, chopped
- 4 cloves garlic, minced
- 1/4 cup lime juice
- 2 tbsp apple cider vinegar
- 1 tbsp ground cumin
- 1 tbsp dried oregano
- 1/2 tsp ground cloves
- 1/2 cup beef broth
- 2 bay leaves
- Salt and pepper to taste
Instructions
- Place the chipotle peppers, onion, garlic, lime juice, vinegar, cumin, oregano, cloves, and beef broth in a blender. Blend until smooth.
- Season the beef chunks with salt and pepper.
- Place beef in a slow cooker and pour the blended sauce over it. Add bay leaves.
- Cover and cook on low for 8-10 hours or on high for 4-6 hours, until the beef is very tender.
- Remove the bay leaves and shred the beef with two forks.
- Return the shredded beef to the slow cooker and stir to coat with the sauce.
- Serve hot in tacos, burritos, or bowls.
Notes
- Adjust the number of chipotle peppers to your preferred heat level.
- Can be made ahead and stored in the fridge for up to 4 days or frozen for 2 months.
- Try serving with fresh cilantro, lime wedges, and pickled onions.
