Description

Crispy tortilla chips topped with savory chili and melted cheese—an easy and delicious appetizer or snack that’s perfect for sharing.

Ingredients

  • 8 oz tortilla chips (about half a standard bag)
  • 1 cup cooked chili (homemade or canned)
  • 1½ cups shredded cheddar cheese (or Mexican blend)
  • ½ cup diced tomatoes (optional)
  • ¼ cup sliced jalapeños (optional, for heat)
  • 2 tablespoons sliced green onions
  • Sour cream, guacamole or salsa for serving (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Spread the tortilla chips in an even layer on a large baking sheet or oven-safe platter.
  3. Warm the chili if needed so it’s easier to spoon and spread.
  4. Spoon the chili evenly over the chips.
  5. Sprinkle the shredded cheese generously on top of the chili-covered chips.
  6. Add diced tomatoes and sliced jalapeños, if using.
  7. Bake in the preheated oven for about 8–10 minutes, until the cheese is fully melted and bubbling.
  8. Remove from oven, top with sliced green onions, and let cool for 2 minutes.
  9. Serve immediately with sour cream, guacamole or salsa on the side.

Notes

  • Use thick tortilla chips to prevent sogginess under the chili.
  • Homemade vegetarian chili works great for a meat-free option.
  • Customize toppings: black olives, pickled onions, or cilantro add great flavor.
  • For extra crispiness, broil for 1–2 minutes at the end—watch carefully to avoid burning.
  • Leftovers can be gently reheated in a 300°F oven to retain crispiness.
