A vegetarian twist on the classic Sloppy Joes, these Chickpea Sloppy Joes are hearty, flavorful, and perfect for a quick and nutritious meal.

- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 1 can (15 oz) chickpeas, drained and mashed
- 1 cup tomato sauce
- 2 tablespoons tomato paste
- 1 tablespoon soy sauce
- 1 tablespoon maple syrup
- 1 teaspoon smoked paprika
- 1/2 teaspoon chili powder
- Salt and pepper to taste
- 4 burger buns
- Optional toppings: pickles, sliced onions, shredded lettuce
Instructions
- Heat olive oil in a skillet over medium heat. Add chopped onion, garlic, and bell pepper. Sauté until softened, about 5 minutes.
- Add the mashed chickpeas to the skillet and stir well to combine with the vegetables.
- Stir in tomato sauce, tomato paste, soy sauce, maple syrup, smoked paprika, chili powder, salt, and pepper.
- Reduce heat and simmer for 10-15 minutes, stirring occasionally, until the mixture thickens.
- Toast burger buns if desired. Spoon the chickpea mixture onto the buns.
- Add optional toppings as desired and serve warm.

- Use canned or cooked chickpeas for convenience.
- Adjust spices to your preferred heat level.
- Serve with a side of coleslaw or sweet potato fries for a full meal.
