Description

A vegetarian twist on the classic Sloppy Joes, these Chickpea Sloppy Joes are hearty, flavorful, and perfect for a quick and nutritious meal.


Ingredients

  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 can (15 oz) chickpeas, drained and mashed
  • 1 cup tomato sauce
  • 2 tablespoons tomato paste
  • 1 tablespoon soy sauce
  • 1 tablespoon maple syrup
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon chili powder
  • Salt and pepper to taste
  • 4 burger buns
  • Optional toppings: pickles, sliced onions, shredded lettuce

Instructions

  1. Heat olive oil in a skillet over medium heat. Add chopped onion, garlic, and bell pepper. Sauté until softened, about 5 minutes.
  2. Add the mashed chickpeas to the skillet and stir well to combine with the vegetables.
  3. Stir in tomato sauce, tomato paste, soy sauce, maple syrup, smoked paprika, chili powder, salt, and pepper.
  4. Reduce heat and simmer for 10-15 minutes, stirring occasionally, until the mixture thickens.
  5. Toast burger buns if desired. Spoon the chickpea mixture onto the buns.
  6. Add optional toppings as desired and serve warm.

Notes

  • Use canned or cooked chickpeas for convenience.
  • Adjust spices to your preferred heat level.
  • Serve with a side of coleslaw or sweet potato fries for a full meal.
