Description

A hearty and flavorful Chicken Tomato Pasta made with tender chicken, savory tomato sauce, and perfectly cooked pasta. Ideal for a weeknight dinner.


Ingredients

  • 2 tablespoons olive oil
  • 2 chicken breasts, diced
  • 2 cloves garlic, minced
  • 1 onion, chopped
  • 1 can (14 oz) crushed tomatoes
  • 2 tablespoons tomato paste
  • 1 teaspoon dried oregano
  • 1/2 teaspoon chili flakes (optional)
  • Salt and pepper to taste
  • 300g pasta (penne or spaghetti)
  • Fresh basil leaves for garnish
  • Grated Parmesan cheese (optional)

Instructions

  1. Heat olive oil in a large pan over medium heat.
  2. Add diced chicken and cook until browned and cooked through. Remove and set aside.
  3. In the same pan, sauté onion until soft, then add garlic and cook for another minute.
  4. Add crushed tomatoes, tomato paste, oregano, chili flakes, salt, and pepper. Simmer for 10-15 minutes.
  5. Meanwhile, cook the pasta according to package instructions. Drain and set aside.
  6. Return the cooked chicken to the sauce and simmer for another 5 minutes.
  7. Combine the pasta with the sauce and toss well to coat.
  8. Serve hot, garnished with fresh basil and grated Parmesan if desired.

Notes

  • You can use leftover cooked chicken to save time.
  • Adjust spice level by modifying chili flakes.
  • Great with a side of garlic bread or green salad.
