Description
A hearty and flavorful Chicken Tomato Pasta made with tender chicken, savory tomato sauce, and perfectly cooked pasta. Ideal for a weeknight dinner.

- 2 tablespoons olive oil
- 2 chicken breasts, diced
- 2 cloves garlic, minced
- 1 onion, chopped
- 1 can (14 oz) crushed tomatoes
- 2 tablespoons tomato paste
- 1 teaspoon dried oregano
- 1/2 teaspoon chili flakes (optional)
- Salt and pepper to taste
- 300g pasta (penne or spaghetti)
- Fresh basil leaves for garnish
- Grated Parmesan cheese (optional)
Instructions
- Heat olive oil in a large pan over medium heat.
- Add diced chicken and cook until browned and cooked through. Remove and set aside.
- In the same pan, sauté onion until soft, then add garlic and cook for another minute.
- Add crushed tomatoes, tomato paste, oregano, chili flakes, salt, and pepper. Simmer for 10-15 minutes.
- Meanwhile, cook the pasta according to package instructions. Drain and set aside.
- Return the cooked chicken to the sauce and simmer for another 5 minutes.
- Combine the pasta with the sauce and toss well to coat.
- Serve hot, garnished with fresh basil and grated Parmesan if desired.
Notes
- You can use leftover cooked chicken to save time.
- Adjust spice level by modifying chili flakes.
- Great with a side of garlic bread or green salad.
