- 1 pound boneless, skinless chicken breasts or thighs
- 1 tablespoon olive oil
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- 1/2 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 8 small corn or flour tortillas
- Toppings: diced tomatoes, shredded lettuce, shredded cheese, sour cream, avocado, salsa, cilantro
Instructions
- Cut chicken into bite-sized pieces or thin strips.
- In a bowl, toss chicken with olive oil and all spices until evenly coated.
- Heat a skillet over medium-high heat. Add chicken and cook for 5–7 minutes, or until cooked through and lightly browned.
- Warm tortillas in a dry skillet or microwave.
- Assemble tacos by filling each tortilla with cooked chicken and your choice of toppings.
- Serve immediately with lime wedges on the side if desired.
Notes
- Use rotisserie chicken for an even quicker version—just heat with spices in a skillet.
- For smoky flavor, grill the chicken instead of pan-searing.
- Leftover chicken can be stored in the fridge for up to 3 days.
