- 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 2 cups marinara sauce
- 2 cups chicken broth
- 8 oz uncooked penne or rotini pasta
- 1 tsp Italian seasoning
- Salt and pepper to taste
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- Fresh basil or parsley for garnish (optional)
Instructions
- Heat olive oil in a large skillet over medium heat. Add chicken, season with salt, pepper, and Italian seasoning, and cook until browned and cooked through, about 5–7 minutes. Remove and set aside.
- In the same skillet, add garlic and sauté for 1 minute.
- Add marinara sauce, chicken broth, and pasta. Stir to combine and bring to a boil.
- Reduce heat, cover, and simmer for 12–15 minutes, stirring occasionally, until pasta is tender.
- Return cooked chicken to the skillet and stir in Parmesan cheese.
- Top with shredded mozzarella cheese, cover for 2–3 minutes, or broil for a few minutes until cheese is melted and bubbly.
- Garnish with fresh herbs if desired and serve hot.
Notes
- Use rotisserie chicken to save time.
- Add red pepper flakes for a spicy kick.
- This dish reheats well and is great for leftovers.
