Pinch of salt
For the Dumpling Sauce:

2 tbsp soy sauce

1 tbsp rice vinegar

1 tsp sesame oil

1 tsp honey

1/2 tsp chili flakes (optional)
For Assembly:
-
4 burger buns
-
1 tbsp neutral oil (for cooking)

Instructions
-
In a mixing bowl, combine ground chicken, garlic, ginger, green onions, soy sauce, sesame oil, salt, pepper, and breadcrumbs. Mix just until combined.
-
Form into 4 patties.
-
Heat oil in a skillet over medium heat. Cook patties for 4–5 minutes per side, or until golden and cooked through (internal temp: 165°F).
-
While patties cook, toss together cabbage, carrots, vinegar, sesame oil, and salt in a small bowl to make the slaw.
-
In another small bowl, whisk together all dumpling sauce ingredients.
-
Lightly toast burger buns, if desired.
-
Assemble burgers: Place chicken patty on the bottom bun, top with slaw and a drizzle of dumpling sauce. Add more green onions or herbs if you like.
-
Top with bun and serve warm.
Notes
-
Make it spicy by adding Sriracha or chili oil to the sauce.
-
These patties also work great in lettuce wraps or rice bowls.
-
Swap chicken for ground turkey or pork if preferred.
