Description

A delicious and satisfying Chicken Caesar Pasta Salad combining the flavors of Caesar salad with hearty pasta and grilled chicken. Perfect for a light lunch or a refreshing dinner.


Ingredients

  • 2 cups cooked pasta (penne or rotini)
  • 2 cups cooked chicken breast, chopped or shredded
  • 1/2 cup Caesar dressing
  • 1/4 cup grated Parmesan cheese
  • 1 cup romaine lettuce, chopped
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup croutons
  • Salt and black pepper to taste
  • 1 tablespoon olive oil (for cooking chicken, if needed)


Instructions

  1. Cook pasta according to package directions. Drain and rinse under cold water to cool.
  2. If not using pre-cooked chicken, season chicken breasts with salt and pepper and cook in olive oil until done. Let cool and chop or shred.
  3. In a large mixing bowl, combine pasta, chicken, lettuce, cherry tomatoes, and Caesar dressing.
  4. Toss until everything is evenly coated with dressing.
  5. Sprinkle with Parmesan cheese and top with croutons before serving.
  6. Season with additional salt and pepper if needed.

Notes

  • You can use rotisserie chicken for convenience.
  • Add bacon bits or avocado for extra flavor.
  • Chill in the refrigerator for 30 minutes before serving for best taste.
