Description

Chicken Cabbage Savory Pirog is a traditional Eastern European-style baked pie filled with a flavorful mixture of chicken, sautéed cabbage, onions, and spices. This hearty and satisfying dish can be served hot or at room temperature, making it perfect for lunch, dinner, or picnics.


Ingredients

  • 3 cups all-purpose flour
  • 1 packet (2 1/4 tsp) active dry yeast
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • 3/4 cup warm milk
  • 1/4 cup warm water
  • 1/4 cup vegetable oil
  • 1 egg
  • 2 tablespoons butter
  • 1 medium onion, chopped
  • 2 cups finely shredded green cabbage
  • 2 cups cooked chicken, shredded
  • Salt and pepper, to taste
  • 1 egg (for egg wash)

Instructions

  1. In a large bowl, combine warm water, milk, sugar, and yeast. Let sit for 5–10 minutes until foamy.
  2. Add salt, oil, egg, and flour gradually. Mix and knead until smooth. Cover and let rise for 1 hour or until doubled in size.
  3. Meanwhile, melt butter in a skillet over medium heat. Sauté onion until translucent, about 5 minutes.
  4. Add cabbage and cook until soft and lightly golden, about 10 minutes. Stir in shredded chicken, salt, and pepper. Cook 2–3 minutes more. Let mixture cool.
  5. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  6. Punch down dough and divide into two portions. Roll out one portion into a rectangle and place on baking sheet.
  7. Spread chicken and cabbage mixture evenly over the dough, leaving a border around the edges.
  8. Roll out second portion of dough and place on top. Pinch edges to seal and crimp. Cut small slits on top to vent.
  9. Brush top with beaten egg. Bake for 30–35 minutes until golden brown.
  10. Cool slightly before slicing and serving.

Notes

  • Can be made with ground chicken or turkey as an alternative.
  • Serve with sour cream or a light salad for a complete meal.
  • Freezes well—wrap tightly and reheat in oven before serving.
