- 2 3/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 cup unsalted butter, softened
- 1 1/2 cups white sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon almond extract (optional)
- 3 to 4 tablespoons buttermilk
- Extra sugar for rolling
Instructions
- Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.
- In a medium bowl, whisk together flour, baking soda, and baking powder. Set aside.
- In a large bowl, cream together the butter and sugar until smooth and fluffy.
- Beat in the egg, vanilla extract, and almond extract (if using).
- Gradually add the dry ingredients to the wet ingredients, mixing until combined.
- Roll rounded teaspoonfuls of dough into balls, then roll in sugar before placing on baking sheets.
- Flatten each ball slightly with the bottom of a glass dipped in sugar and lightly brush with buttermilk.
- Bake for 8 to 10 minutes or until the edges are just golden.
- Allow cookies to cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
- For a crisper cookie, bake a minute longer.
- Cookies will appear soft but set as they cool.
- Store in an airtight container to maintain chewiness.
