- 2 1/2 cups old-fashioned rolled oats
- 1/2 cup honey
- 1/4 cup unsalted butter
- 1/3 cup brown sugar
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/2 cup chopped almonds
- 1/2 cup dried cranberries
- 1/4 cup mini chocolate chips (optional)
Instructions
- Preheat the oven to 350°F (175°C). Line an 8-inch square baking dish with parchment paper.
- Toast the oats on a baking sheet for about 10 minutes, stirring halfway through. Let cool slightly.
- In a small saucepan, combine honey, butter, and brown sugar. Heat over medium heat, stirring until melted and combined. Remove from heat and stir in vanilla and salt.
- In a large bowl, mix toasted oats, almonds, and dried cranberries. Pour in the honey mixture and stir until well coated.
- Press the mixture firmly into the prepared baking dish. Use a flat spatula or the bottom of a glass to press evenly.
- Sprinkle mini chocolate chips over the top, pressing them in slightly.
- Refrigerate for at least 2 hours or until firm. Lift out of the pan and cut into bars.
Notes
- You can substitute any nuts or dried fruit based on preference.
- Use maple syrup instead of honey for a vegan version.
- Bars can be stored in an airtight container at room temperature for up to 1 week.
