Description

This chewy granola bar recipe is a wholesome and customizable snack made with oats, honey, and a mix of nuts and dried fruits. Perfect for on-the-go energy boosts or a healthy treat.


Ingredients

  • 2 1/2 cups old-fashioned rolled oats
  • 1/2 cup honey
  • 1/4 cup unsalted butter
  • 1/3 cup brown sugar
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/2 cup chopped almonds
  • 1/2 cup dried cranberries
  • 1/4 cup mini chocolate chips (optional)

Instructions

  1. Preheat the oven to 350°F (175°C). Line an 8-inch square baking dish with parchment paper.
  2. Toast the oats on a baking sheet for about 10 minutes, stirring halfway through. Let cool slightly.
  3. In a small saucepan, combine honey, butter, and brown sugar. Heat over medium heat, stirring until melted and combined. Remove from heat and stir in vanilla and salt.
  4. In a large bowl, mix toasted oats, almonds, and dried cranberries. Pour in the honey mixture and stir until well coated.
  5. Press the mixture firmly into the prepared baking dish. Use a flat spatula or the bottom of a glass to press evenly.
  6. Sprinkle mini chocolate chips over the top, pressing them in slightly.
  7. Refrigerate for at least 2 hours or until firm. Lift out of the pan and cut into bars.

Notes

  • You can substitute any nuts or dried fruit based on preference.
  • Use maple syrup instead of honey for a vegan version.
  • Bars can be stored in an airtight container at room temperature for up to 1 week.
