Description

Cherry Bars feature a soft, buttery base layered with tart cherry pie filling and finished with a sweet glaze. They’re perfect for potlucks or an everyday treat.

Ingredients

Scale
  • 2 1/2 cups all-purpose flour
  • 2 cups sugar
  • 1 cup unsalted butter, softened
  • 4 large eggs
  • 1 tsp vanilla extract
  • 1/2 tsp almond extract
  • 1/2 tsp baking powder
  • 1 (21 oz) can cherry pie filling
  • 1 cup confectioners’ sugar
  • 2 tbsp milk

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 15×10-inch baking pan.
  2. In a large bowl, cream together butter and sugar until light and fluffy.
  3. Add eggs one at a time, mixing well after each addition. Stir in vanilla and almond extracts.
  4. In a separate bowl, whisk together flour and baking powder.
  5. Gradually add dry ingredients to the wet mixture until fully combined.
  6. Spread two-thirds of the batter into the prepared pan.
  7. Spoon cherry pie filling evenly over the batter.
  8. Drop remaining batter by spoonfuls over the cherry filling.
  9. Bake for 30-35 minutes, or until golden and a toothpick inserted comes out clean.
  10. Let bars cool completely in the pan.
  11. In a small bowl, whisk together confectioners’ sugar and milk to make a glaze.
  12. Drizzle glaze over the cooled bars before serving.

Notes

  • Try different pie fillings like blueberry or raspberry for a twist.
  • Add chopped nuts or shredded coconut before baking for added texture and flavor.
  • Substitute almond extract with lemon zest for a citrus version.
  • Swirl in cream cheese for a richer bar.
