A deliciously crispy and cheesy chicken quesadilla, perfect for a quick and satisfying meal.
Ingredients
- 2 cups cooked chicken, shredded
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 4 large flour tortillas
- 1/4 cup chopped green onions
- 1/4 cup chopped bell peppers (optional)
- 1 tsp taco seasoning
- 2 tbsp butter or cooking spray
- Sour cream and salsa for serving
Instructions
- In a bowl, mix the shredded chicken with taco seasoning, green onions, and bell peppers (if using).
- Heat a skillet over medium heat and lightly butter one side of a tortilla.
- Place the tortilla, buttered side down, on the skillet. Spread 1/4 of the chicken mixture and a mix of both cheeses over half of the tortilla.
- Fold the tortilla in half and cook until golden brown on one side, about 2-3 minutes.
- Flip and cook the other side until cheese is melted and the tortilla is crispy.
- Repeat with remaining tortillas and filling.
- Cut into wedges and serve warm with sour cream and salsa.
Notes
- Use rotisserie chicken for faster prep.
- Customize with your favorite vegetables or hot sauce.
- Cook on medium heat to ensure cheese melts without burning the tortilla.
