Description

A deliciously crispy and cheesy chicken quesadilla, perfect for a quick and satisfying meal.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 4 large flour tortillas
  • 1/4 cup chopped green onions
  • 1/4 cup chopped bell peppers (optional)
  • 1 tsp taco seasoning
  • 2 tbsp butter or cooking spray
  • Sour cream and salsa for serving


Instructions

  1. In a bowl, mix the shredded chicken with taco seasoning, green onions, and bell peppers (if using).
  2. Heat a skillet over medium heat and lightly butter one side of a tortilla.
  3. Place the tortilla, buttered side down, on the skillet. Spread 1/4 of the chicken mixture and a mix of both cheeses over half of the tortilla.
  4. Fold the tortilla in half and cook until golden brown on one side, about 2-3 minutes.
  5. Flip and cook the other side until cheese is melted and the tortilla is crispy.
  6. Repeat with remaining tortillas and filling.
  7. Cut into wedges and serve warm with sour cream and salsa.

Notes

  • Use rotisserie chicken for faster prep.
  • Customize with your favorite vegetables or hot sauce.
  • Cook on medium heat to ensure cheese melts without burning the tortilla.
