Description

Cheesy Chicken Garlic Bread Sandwich is a savory, indulgent sandwich made with garlic buttered bread, tender shredded chicken, and loads of melted cheese for the perfect comfort food bite.


Ingredients

  • 2 cups cooked shredded chicken
  • 1/2 cup mayonnaise
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1 tablespoon chopped fresh parsley (optional)
  • 1 loaf French bread or 4 sandwich rolls
  • 3 tablespoons unsalted butter, softened
  • 1 tablespoon minced garlic
  • 1 1/2 cups shredded mozzarella cheese
  • 1/2 cup shredded cheddar cheese

Instructions

  1. Preheat oven to 375°F (190°C) and line a baking sheet with foil.
  2. In a bowl, mix shredded chicken, mayonnaise, garlic powder, onion powder, salt, pepper, and parsley.
  3. Slice French bread or sandwich rolls in half lengthwise.
  4. In a small bowl, mix softened butter with minced garlic.
  5. Spread garlic butter evenly over the cut sides of the bread.
  6. Place buttered bread on the baking sheet and bake for 5-7 minutes until lightly toasted.
  7. Remove from oven, top each half with the chicken mixture, and sprinkle generously with mozzarella and cheddar cheese.
  8. Return to oven and bake for another 10-12 minutes until cheese is melted and bubbly.
  9. Cut into sandwich portions and serve hot.

Notes

  • Use rotisserie chicken for convenience.
  • Add sliced jalapeños or hot sauce for a spicy kick.
  • Great for using up leftover chicken and bread.
