- 1.5 lbs ground chicken
- 1 cup shredded mozzarella cheese
- 2 large eggs
- 1/3 cup mayonnaise
- 1/3 cup all-purpose flour
- 2 cloves garlic, minced
- 1/4 cup chopped green onions
- Salt and pepper to taste
- 2 tbsp chopped fresh parsley (optional)
- Oil for frying
Instructions
- In a large bowl, combine ground chicken, shredded cheese, eggs, mayonnaise, flour, garlic, green onions, parsley, salt, and pepper. Mix until well combined.
- Cover the bowl and refrigerate the mixture for 15-20 minutes to help it firm up.
- Heat oil in a non-stick skillet over medium heat.
- Scoop about 2 tablespoons of the chicken mixture and shape into a patty. Place in the skillet.
- Cook fritters for 3-4 minutes on each side or until golden brown and fully cooked through.
- Transfer to a paper towel-lined plate to drain excess oil.
- Repeat with the remaining mixture.
- Serve warm with your favorite dipping sauce.

- Use a meat thermometer to ensure internal temperature reaches 165°F.
- Can be made ahead and reheated in the oven.
