1 lb boneless, skinless chicken breasts (cut into bite-sized pieces)

1 cup long-grain white rice (uncooked)

2 cups chicken broth

1 cup shredded cheddar cheese

1/2 cup shredded mozzarella cheese

1/2 cup sour cream

1 small onion (diced)

2 cloves garlic (minced)

1 tablespoon olive oil

1/2 teaspoon salt

1/4 teaspoon black pepper

1/2 teaspoon paprika

1 cup frozen peas and carrots (optional)

2 tablespoons chopped fresh parsley (for garnish)
Instructions

Heat olive oil in a large skillet over medium heat. Add diced onion and cook for 2–3 minutes until soft.

Stir in garlic and cook for another 30 seconds.

Add chicken pieces, season with salt, pepper, and paprika. Cook until browned on all sides (about 5–6 minutes).

Stir in uncooked rice, then pour in the chicken broth. Mix well and bring to a boil.

Reduce heat to low, cover, and simmer for 18–20 minutes, or until rice is tender and liquid is absorbed.

Stir in frozen peas and carrots, if using. Cook for another 2–3 minutes.

Turn off heat. Mix in sour cream, cheddar cheese, and mozzarella until melted and creamy.
