Description

This Cheesy Chicken and Rice recipe is creamy, comforting, and packed with flavor. It’s an easy one-pan dinner made with tender chicken, fluffy rice, and loads of melted cheese. Perfect for busy weeknights or a cozy family meal!


Ingredients

  • 1 lb boneless, skinless chicken breasts (cut into bite-sized pieces)

  • 1 cup long-grain white rice (uncooked)

  • 2 cups chicken broth

  • 1 cup shredded cheddar cheese

  • 1/2 cup shredded mozzarella cheese

  • 1/2 cup sour cream

  • 1 small onion (diced)

  • 2 cloves garlic (minced)

  • 1 tablespoon olive oil

  • 1/2 teaspoon salt

  • 1/4 teaspoon black pepper

  • 1/2 teaspoon paprika

  • 1 cup frozen peas and carrots (optional)

 

  • 2 tablespoons chopped fresh parsley (for garnish)


Instructions

  • Heat olive oil in a large skillet over medium heat. Add diced onion and cook for 2–3 minutes until soft.

  • Stir in garlic and cook for another 30 seconds.

  • Add chicken pieces, season with salt, pepper, and paprika. Cook until browned on all sides (about 5–6 minutes).

  • Stir in uncooked rice, then pour in the chicken broth. Mix well and bring to a boil.

  • Reduce heat to low, cover, and simmer for 18–20 minutes, or until rice is tender and liquid is absorbed.

  • Stir in frozen peas and carrots, if using. Cook for another 2–3 minutes.

  • Turn off heat. Mix in sour cream, cheddar cheese, and mozzarella until melted and creamy.

 

  • Sprinkle with chopped parsley and serve hot.


Notes

  • You can swap the chicken for rotisserie or pre-cooked chicken to save time.

  • Add a dash of hot sauce or red pepper flakes for a spicy kick.

 

  • Works great with brown rice too—just adjust cooking time and liquid.
