Main Meatloaf:
- 1 lb ground beef
- 1/2 lb ground pork (optional for extra flavor)
- 1 small onion, finely diced
- 1 green bell pepper, finely diced
- 1/2 cup mushrooms, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 tablespoon Worcestershire sauce
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon Italian seasoning
- 1 cup shredded provolone cheese (or mozzarella)
- 2 eggs
- 3/4 cup breadcrumbs
- 1/4 cup milk
Topping:
- 4 slices provolone cheese
Garnish:
- Chopped parsley for garnish (optional)
Instructions
- Preheat the oven: Preheat the oven to 375°F.
- Sauté vegetables: In a skillet over medium heat, sauté onion, bell pepper, mushrooms, and garlic until softened, about 5–6 minutes. Let cool slightly.
- Mix meatloaf: In a large bowl, combine beef, pork (if using), sautéed vegetables, Worcestershire sauce, salt, pepper, Italian seasoning, shredded cheese, eggs, breadcrumbs, and milk. Mix gently until combined.
- Bake: Transfer mixture to a baking sheet or loaf pan, shape into a loaf, and bake for 40–45 minutes. Top with provolone slices and bake for an additional 5–10 minutes until cheese is melted. Let rest before slicing and garnish with parsley.
Notes
- For a cheesier twist, add more shredded cheese into the center of the loaf before baking.
- Pairs well with mashed potatoes or roasted veggies. Leftovers are great for sandwiches.
