- 1 small onion, chopped
- 2 cloves garlic, minced
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp ketchup
- 1 tbsp yellow mustard
- Mayonnaise, for serving
- 4 large flour tortillas
- 2 cups shredded cheddar cheese
- Pickles (optional)
- Tomatoes, sliced (optional)
- Shredded lettuce (optional)
Instructions
- In a skillet over medium heat, cook the ground beef until browned. Drain any excess fat.
- Add chopped onions and minced garlic. Cook until the onions are soft and translucent.
- Stir in ketchup, mustard, salt, and pepper. Simmer for 2–3 minutes, then remove from heat.
- Heat a clean skillet over medium heat. Lay a tortilla flat and sprinkle half with shredded cheese.
- Spoon a layer of the beef mixture on top of the cheese. Add optional toppings like pickles or tomatoes.
- Sprinkle more cheese over the meat, then fold the tortilla in half.
- Place the quesadilla in the skillet and cook for 2–3 minutes per side or until golden brown and crispy.
- Remove from heat and let rest for 1 minute before slicing into wedges.
- Serve with mayo or your favorite dipping sauce.
