Description

Ingredients

  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1/4 tsp cayenne pepper or mustard powder (optional)
  • 1/4 cup unsalted butter, cold and cubed
  • 1 cup grated cheddar cheese (or your favorite hard cheese)
  • 2/3 cup milk (plus more if needed)
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, baking powder, salt, and optional spices.
  3. Add the cold, cubed butter and rub it into the flour mixture with your fingertips until it resembles breadcrumbs.
  4. Stir in the grated cheese.
  5. Pour in the milk gradually, mixing with a fork until a soft dough forms.
  6. Turn the dough out onto a floured surface and gently knead a few times.
  7. Pat the dough to about 1-inch thick and cut out scones using a round cutter.
  8. Place the scones on the prepared baking sheet and brush the tops with beaten egg.
  9. Bake for 12-15 minutes or until risen and golden brown.
