Description

A quick and healthy stir-fry featuring tender chicken, crisp broccoli, and roasted cashews tossed in a savory garlic soy sauce.


Ingredients

  • 1 lb chicken breasts, cut into bite-sized pieces
  • 2 tbsp cornstarch
  • 2 cups broccoli florets
  • 2 cloves garlic, minced
  • 3 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tbsp rice vinegar
  • 1 tbsp mirin (optional)
  • 1/4 cup chicken broth
  • 1 tbsp brown sugar
  • 1/2 cup unsalted roasted cashews
  • 2 scallions, chopped
  • 2 tbsp vegetable oil (plus more as needed)
  • 1/4 tsp red pepper flakes (optional)

Instructions

  1. Cut chicken into bite-sized pieces and toss with cornstarch.
  2. Heat vegetable oil in a large skillet or wok over medium-high heat.
  3. Cook chicken until golden brown and cooked through. Remove and set aside.
  4. In the same skillet, stir-fry broccoli for 3-4 minutes until tender-crisp.
  5. Add garlic and cook for 30 seconds until fragrant.
  6. Return chicken to the skillet.
  7. In a bowl, mix soy sauce, sesame oil, rice vinegar, mirin, chicken broth, and brown sugar.
  8. Pour sauce into skillet, stir to coat chicken and broccoli, and simmer until slightly thickened.
  9. Stir in cashews and scallions just before serving.
  10. Serve hot over steamed rice or noodles.

  • Use shrimp or tofu instead of chicken for variety.
  • Add more vegetables like bell peppers or snap peas.
  • Adjust heat with red pepper flakes or sriracha.
  • Substitute hoisin for a sweeter, richer flavor.
  • Swap broccoli for cauliflower if preferred.
