Description
A quick and healthy stir-fry featuring tender chicken, crisp broccoli, and roasted cashews tossed in a savory garlic soy sauce.

- 1 lb chicken breasts, cut into bite-sized pieces
- 2 tbsp cornstarch
- 2 cups broccoli florets
- 2 cloves garlic, minced
- 3 tbsp soy sauce
- 1 tbsp sesame oil
- 1 tbsp rice vinegar
- 1 tbsp mirin (optional)
- 1/4 cup chicken broth
- 1 tbsp brown sugar
- 1/2 cup unsalted roasted cashews
- 2 scallions, chopped
- 2 tbsp vegetable oil (plus more as needed)
- 1/4 tsp red pepper flakes (optional)
Instructions
- Cut chicken into bite-sized pieces and toss with cornstarch.
- Heat vegetable oil in a large skillet or wok over medium-high heat.
- Cook chicken until golden brown and cooked through. Remove and set aside.
- In the same skillet, stir-fry broccoli for 3-4 minutes until tender-crisp.
- Add garlic and cook for 30 seconds until fragrant.
- Return chicken to the skillet.
- In a bowl, mix soy sauce, sesame oil, rice vinegar, mirin, chicken broth, and brown sugar.
- Pour sauce into skillet, stir to coat chicken and broccoli, and simmer until slightly thickened.
- Stir in cashews and scallions just before serving.
- Serve hot over steamed rice or noodles.
Notes
- Use shrimp or tofu instead of chicken for variety.
- Add more vegetables like bell peppers or snap peas.
- Adjust heat with red pepper flakes or sriracha.
- Substitute hoisin for a sweeter, richer flavor.
- Swap broccoli for cauliflower if preferred.
