Description

This elegant carrot cake roll features a moist, spiced carrot cake filled with tangy cream cheese frosting, making it a perfect dessert for springtime gatherings or festive occasions.


Ingredients

  • 2/3 cup granulated sugar
  • 1/4 tsp salt

  • 2 tbsp vegetable oil

  • 4 tbsp butter, softened
  • 1 cup confectioners’ sugar (plus extra for dusting)
  • 1 tsp vanilla extract (for filling)

Instructions

  1. Preheat oven to 350°F (175°C). Line a 10×15-inch jelly roll pan with parchment paper and lightly grease.
  2. In a large bowl, beat eggs and sugar until light and fluffy.
  3. Add vegetable oil and 1 tsp vanilla extract, mixing until combined.
  4. In a separate bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  5. Gradually add the dry ingredients to the wet mixture. Fold in grated carrots.
  6. Spread batter evenly in the prepared pan and bake for 12-15 minutes, or until cake springs back when touched.
  7. While baking, lay a clean kitchen towel on a flat surface and dust generously with confectioners’ sugar.
  8. Once baked, immediately turn the cake onto the towel, remove parchment, and roll the cake in the towel from the short end. Cool completely.
  9. Beat cream cheese, butter, 1 cup confectioners’ sugar, and 1 tsp vanilla extract until smooth to make the filling.
  10. Unroll cooled cake, spread filling evenly, then re-roll the cake (without towel).
  11. Wrap in plastic wrap and refrigerate at least 1 hour before slicing and serving.
