Instructions
- Preheat oven and prepare baking sheets: Preheat oven to 350°F. Line two baking sheets with parchment paper.
- Mix dry ingredients: In a medium bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
- Cream butter and sugars: In a large mixing bowl, beat butter, granulated sugar, and brown sugar until light and fluffy.
- Add egg and vanilla: Mix in the egg and vanilla until well combined.
- Combine wet and dry ingredients: Stir in grated carrots, then gradually mix in the dry ingredients until just combined.
- Add mix-ins: Fold in oats, nuts, and raisins if using.
- Bake: Drop rounded tablespoons of dough onto prepared baking sheets and bake for 10–12 minutes until edges are lightly golden.
- Cool and enjoy: Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
