Description
A rich, savory-sweet jam made from slowly caramelized onions with sugar and vinegar, perfect as a spread or condiment for meats, cheeses, and sandwiches.
Ingredients
- 4 cups thinly sliced yellow onions
- 3 tablespoons olive oil
- 3/4 cup brown sugar
- 1/2 cup balsamic vinegar
- 1 bay leaf
- 2-3 sprigs fresh thyme
- 1/4 teaspoon salt
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add sliced onions and cook until softened and beginning to caramelize, about 15 minutes.
- Add thyme and bay leaf, cook for another 3 minutes.
- Sprinkle in the brown sugar evenly, allowing it to melt and caramelize without stirring for about 5 minutes.
- Stir gently, then add balsamic vinegar and continue to simmer until the mixture thickens, about 10 minutes.
- Season with salt, remove bay leaf and thyme sprigs, and let cool before storing in a jar.
Notes
- Use red onions for a deeper color and slightly different flavor.
- Great for burgers, cheese boards, or as a pizza topping.
- Can be stored in the fridge for up to 2 weeks.
- For longer storage, use sterilized jars and canning method.
