Description

A rich, savory-sweet jam made from slowly caramelized onions with sugar and vinegar, perfect as a spread or condiment for meats, cheeses, and sandwiches.


Ingredients

  • 4 cups thinly sliced yellow onions
  • 3 tablespoons olive oil
  • 3/4 cup brown sugar
  • 1/2 cup balsamic vinegar
  • 1 bay leaf
  • 2-3 sprigs fresh thyme
  • 1/4 teaspoon salt


Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add sliced onions and cook until softened and beginning to caramelize, about 15 minutes.
  3. Add thyme and bay leaf, cook for another 3 minutes.
  4. Sprinkle in the brown sugar evenly, allowing it to melt and caramelize without stirring for about 5 minutes.
  5. Stir gently, then add balsamic vinegar and continue to simmer until the mixture thickens, about 10 minutes.
  6. Season with salt, remove bay leaf and thyme sprigs, and let cool before storing in a jar.

Notes

  • Use red onions for a deeper color and slightly different flavor.
  • Great for burgers, cheese boards, or as a pizza topping.
  • Can be stored in the fridge for up to 2 weeks.
  • For longer storage, use sterilized jars and canning method.
